'offlineimap' is a good tool for this particular job.  In its default
mode, it syncs a remote IMAP server to a local maildir, but it can
also sync a remote IMAP to a local IMAP (albeit less tested).

It keeps metadata, and I've used it daily for months now (in the
maildir style).  Seems to be okay whether I mess around on the server
or on the local maildir store.
