[oclug] How to create my own smtp server???

Well I have mail up and running I can send to myself, I can also send from another 
account to my box that is outside the network.

I cannot however send to other domains. I have a relay denied error as a result of using 
paulgilbert.openworld.ca to send mail where infact I should still be using mail.magma.ca. 
I am wondering where I should change the settings?
