I believe when you install grub it copies the absolute disk block
locations of various grub files into the grub bootloader.  If you move
those grub files (as in delete/restore), the bootloader can't find them
on reboot.  Depending on which ones it can't find, you get more or less
info from grub.

Boot from your rescue floppy and re-install grub, which should reset
the bootloader to use the new block locations for the grub files.
