[oclug] Evolution: folder list

I'm a little unclear on some of this. Once I have the folder list
pinned, I see no way to edit it. Where would I drag and drop from? Is
there another list that shows all my folders, even if I have the "show
only subscribed folders" option turned on?

Basically, I'd like to show only the subscribed folders in the folder
panel, but when I decide to move a message, I want the entire list.
