Mozilla allows you to use different skins/themes, that may help.
If I want system wide GTK changes to font size, I can edit /etc/gtk/gtkrc
on my system, and make changes there. You could run Mozilla as a separate
system user and make GTK specific changes in a gtkrc file for just that
user, as well...
After all, it can't hurt to separate the user that typically accesses the
internet, and the user that edits sensitive documents...
