Did you try clicking `Help'?  It's explained there under Index: fonts,
adding under UNIX.

Start .openoffice/spadmin, and click `Fonts'.  Then click `Add' to
select a directory containing the fonts you want to add.  Click `...' to
search for the directory, e.g. /mnt/c/windows/fonts.  8-)

When you find the directory, click `Select'.  Then choose the fonts you
want to add, and go back to the Fonts dialogue where you can continue
adding or deleting.
