I had a similar problem, but was able to get around it by
installing openoffice-bin, which has some stuff already
compiled. Also note bugs.gentoo.org to figure out reasons
why things aren't compiling.

Agreed, although a fast box running as a server should not have
too much to compile. I.E., there's no need to compile X and other
client programs. So, for a server with only a single dedicated task,
and a reasonably fast CPU, installation time would probably be about
the same time (and you may save time on the hardening process).
