Retrospect Express ($49.95 US www.retrospect.com) claims to be able to
perform backups from your Mac to any FTP server. There might be other
backup programs for the Mac that are cheaper and/or free.
Or, run netatalk to mount a linux volume on your Mac and then write
something in Applescript (or MacPerl - www.macperl.com) that would
perform incremental backups based on file modification dates. There's
also freeware versions of cron available for the Mac so you could launch
the script unattended.
