Since you use Evolution, all you need to do is back up your entire
~/evolution/ directory.

Do you also need help with the actual CD burning?  I recommend k3b[1] for
that.  There are other programs, though, and you could always just use
the cdrecord command line -- of course that's a little more difficult.
